Simple quinoa salad

1 cup quinoa
2 cups water
2 carrots
1 cucumber
1 red pepper
1 green pepper
spring onion
1/4 cup olive oli
1/2 lemon (juice)
handful parsley leafs

Cook quinoa (ratio is 2 water : 1 quinoa), let it cool down. Chop vegetables, mix everything together. Season with olive oil, lemon juice and salt.
