Watermelon rosemary fantasy

half the watermelon, around 2 kg (seeded and cubed)
2 tsp fresh rosemary
crushed ice
simple sugar sirup
mint leaves
1 lemon (zest & juice)
Simple sugar syrup:
1 cup water
1 cup brown sugar
zest of 1 lemon

Combine all ingredients in a small saucepan, over medium heat. Bring to a boil, reduce the heat and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Allow the syrup to cool, about 20 minutes. Strain before using.

Pulse the watermelon and rosemary with hand blender. Add lemon juice, sugar syrup and crushed ice, mix well, and garnish with mint.
